Special mutton soup

Ingredients:


1.Mutton pieces with bones-2 kg
2.Onion (cut into square pieces)-5 cup
3.Chopped garlic-1/4 cup
4.Tomato(cut into square pieces)-1 cup
5.Fenugreek-2 table spoon
6.Green chilly(cut into long pieces)-4
7.Small onion-1 cup
8.Cumin seeds-1 tea spoon
9.Pepper powder-1 tea spoon
10.Salt-to taste
11.Coriander powder-1 table spoon
12.Turmeric powder-1 tea spoon
13.Lime juice-2 table spoon


Preparation:


1.Grind a mixture of small onion,cumin seed and pepper powder.
2.Take a cooker.
3.Cook mutton in it along with salt,coriander powder,turmeric powder,tomato,onion,garlic,fenugreek and water.
4.Then add the grinded mixture into it.
5.Allow it to boil well.
6.Remove the mutton pieces from it.
7.Pour lime juice to the gravy.
8.Turn off the flame.
9.Now you can serve the soup with a mutton piece taken in another bowl.


Note:Those who want thick soup,they can add corn flour into it and mix.

Naadan mutton parattu

Ingredients:


1.Mutton(cut into small pieces)-1 kg
2.Turmeric powder-1 tea spoon
3.Kashmiri chilly powder-2 tea spoon
4.Fenugreek-1 tea spoon
5.Coriander powder-1 table spoon
6.Salt-to taste
7.Coconut oil-2 table spoon
8.Curry leaves-2
9.Small onion-1 cup
10.Garlic-10 cloves
11.Cumin seeds-1 tea spoon
12.Pepper(whole)-1 table spoon

Preparation:


1.Grind the mixture of small onion,garlic,cumin seeds and pepper(whole).
2.Take a cooker.
3.Cook mutton in it along with turmeric powder,chilly powder,fenugreek and salt.(pour water if required)
4.Allow water to dry up.
5.Now this mixture is taken into a frying pan.
6.Turn off the flame.
7.Now add the grinded mixture into it.Mix well.
8.Add some oil.Mix well.
9.Spread curry leaves over it.
10.Turn off the flame and serve hot.

Green chicken with pathiri

Green chicken



Ingredients:


1.Chicken pieces-1 kg
2.Lemon juice-1 table spoon
3.Turmeric powder-1/4 tea spoon
4.Salt-to taste
5.Sliced onion-2 cup
6.Green chilly-5
7.Grated coconut-2 cup
8.Curry leaves-1/4 cup
9.Ginger(1 inch pieces)-1
10.Garlic-10 cloves
11.Coriander leaves-1 cup
12.Coconut oil
13.Cloves-5
14.Bay leaves-2
15.Chopped onion-1 cup
16.Chopped ginger-1 tea spoon
17.Chopped garlic-1 tea spoon
18.Garam masala powder-1/2 tea spoon
19.Roasted cashew nut-1/4 cup
20.Butter-1 table spoon



Preparation:


1.Marinate the chicken with salt,turmeric powder and lemon juice for 30 minutes.
2.Partially cook the chicken in a pressure cooker.
3.Heat the oil in a kadai.
4.saute the onion in it until it gets a golden brown colour.
5.Now add ginger,garlic and green chilly.
6.Add grated coconut into it and fry well.
7.Turn off the flame and allow it to cool.
8.Add coriander and curry leaves into it.
9.Now grind the mixture in a grinder.
10.Heat oil in another pan.
11.add cloves and bay leaves.
12.Now add chopped onion ,chopped ginger and chopped garlic and saute well until the onion gets light golden brown colour.
13.Then add the prepared chicken.
14.Cover with a lid.
15.After a while,add the above grinded paste into it.
16.Add salt.Pour 1 cup of water if required.
17.Now sprinkle garam masala powder into it.
18.Cover with a lid until the thick gravy is ready.
19.Turn off the flame.
20.Spread pieces of roasted cashew nuts over it.
21.Then add 1 table spoon butter.
22.Mix well and serve hot.



Pathiri






Ingredients:


1.Rice flour-1 cup
2.Water-(1+1/4) cup
3.Salt-1/4 tea spoon


Preparation:


1.Boil water in a bowl.
2.Add salt to it.
3.Add rice flour and mix well.
4.Now cook it well.
5.Turn off the flame.
6.Allow it to cool.
7.Knead the above mixture to prepare smooth dough.
8.Now prepare small balls using it.
9.Flatten each balls to thin(1mm) round sheet.
10.Heat a tawa.
11.Cook both sides of the above sheets.
12.Serve hot with green chicken.

Tomato chutney

Ingredients:


1.Chopped tomato-3 cup
2.Chopped small onion-1 cup
3.Chopped garlic-1 table spoon
4.Chopped green chilly-1 table spoon
5.Salt-to taste
6.Coconut oil
7.Mustard seeds-1 tea spoon
8.Curry leaves-2

Preparation:


1.Mix chopped tomato,small onion,garlic,green chilly and salt with hands well.
2.Now heat oil in a pan.
3.Add mustard seeds.
4.After 5 seconds,add curry leaves.
5.Put the prepared mixture of vegetables into it.
6.Place a lid over the pan.
7.Reduce the flame to sim.
8.After 2 minutes,mix it well.Add water if required.
9.Off the flame when the thick gravy is ready.

Pepper beef


Ingredients:


1.Beef(cut into cubes)-1 kg
2.Turmeric powder-1/2 tea spoon
3.Kashmiri chilly powder-1 tea spoon
4.Pepper powder-4 tea spoon
5.Coconut oil
6.Curry leaves-5
7.Small onion(grinded)-1 cup
8.Chopped green chilly-1/4 cup
9.Ginger garlic paste-1 table spoon
10.Salt-to taste


Preparation:

1.Cook beef with salt,turmeric powder,kashmiri chilly powder and 2 tea spoon pepper powder.Allow it to dry.
2.Now take a kadai.Pour 3 table spoon coconut oil.
3.Now add curry leaves,grinded small onion and ginger garlic paste.Saute well.
4.Add prepared beef and mix well.Add salt if required.
5.Sprinkle 2 tea spoon pepper powder when the oil comes up.
6.Add curry leaves and green chilly.Mix well.
7.Remove the kadai from the flame and serve hot.

Chicken cutlet

Ingredients:


1.Boneless chicken-1 kg
2.Salt-to taste
3.Garam masala-1 tea spoon
4.Pepper powder-1 tea spoon
5.Turmeric powder-1/4 tea spoon


  • Cook the chicken with above ingredients and grind it.

6.Onion(chopped)-3 cup

7.Ginger(Chopped)-(1+1/2) table spoon
8.Garlic(chopped)-2 table spoon
9.Green chilly(chopped)-1 table spoon
10.Curry leaves(chopped)-1 table spoon
11.Coriander leaves(chopped)-1/4 cup
12.Garam masala powder-1/2 tea spoon
13.Turmeric powder-1/2 tea spoon
14.Kashmiri chilly powder-1 tea spoon
15.Coconut oil
16.Salt
17.Bread crumbs-4 cup
18.Cooked potato(smashed)-4
19.Egg-4

Preparation:

1.Pour oil into a heated pan.
2.Add chopped onion and saute well.Add ginger,garlic and green chilly.Mix well.
3.When onion gets golden brown colour,add turmeric powder,kashmiri chilly powder and garam masala powder.Mix well.
4.Add salt(to taste).
5.Add coriander leaves.

6.Add prepared chicken into it.Mix well.

7.Off the flame.
8.Add smashed potato into it (add salt if required).Mix well.
9.Allow it to cool and shape the mixture into cutlets.
10.Dip the cutlets in beated eggs.
11.Roll it in bread crumbs.
12.Fry these in coconut oil until it acquires a golden brown colour.
13.Serve along with tomatao sauce.

Pizza


Ingredients:

For dough:
1.Maida-3 cup(1 cup=200 ml)
2.Yeast-(1+1/2)tea spoon
3.Sugar-1 teaspoon
4.Lukewarm water-1 cup
5.Lukewarm milk-1/2 cup
6.Olive oil-2 table spoon


For topping:

7.Onion(round slices)-1
8.Tomato(round slices)-2
9.Paneer[cottage cheese](grated)-1 cup
10.Cheese(grated)-1 cup
11.Oregano-for sprinkling
12.Tomato sauce-4 table spoon


Preparation:


1.Take a small bowl.Add water,yeast,sugar.Mix well.Allow it to raise up.
2.Take maida into a large bowl.Add the prepared mixture,milk and olive oil into it.Mix well and then knead to a smooth elastic dough(add water if required).
3.Cover the dough with a wet muslin cloth and leave it to rise in a warm place for an hour.
4.After one hour,take the dough and seperate it into two equal halves.
5.Take a pizza pan and spread olive oil.
6.Flatten the dough with hands until it fills the pizza pan.
7.Prick with a fork all over the pizza base.
8.Spread the tomato sauce over it.
9.Place onion and tomato pieces.
10.Spread oregano over it.
11.Then add paneer on it.
12.Drip olive oil all over the pizza base.
13.Add grated mozzarella cheese over it.
14.Spread oregano over it.
16.Cook the pizza in the preheated oven for 10-15 minutes.

Special chicken fried rice:

Ingredients:


1.Cooked basmati rice-5 cup
2.Fried boneless chicken(grated)-1 cup
3.Vegetable oil
4.Salt
5.Soya sauce-2 tea spoon
6.Celery-1/4 cup
7.Spring onion-1/4 cup
8.Chicken stock-1/4 cup
9.Onion(sliced)-1/2 cup
10.Carrot(cut into small long pieces)-1/2 cup
11.Beans(cut into small long pieces)-1/2 cup
12.Capsicum-1/4 cup
13.Fresh green peas(boiled)-1/4 cup
14.White pepper powder-1 teaspoon
15.Sugar-a pinch
16.Ginger(sliced into small long pieces)-2 table spoon
17.Garlic(sliced into small long pieces)-2 table spoon
18.Butter-1 table spoon

Preparation:


1.Heat the kadai and pour vegetable oil.
2.Add onion into it.After some time add ginger and garlic .Saute well.
3.Add carrot,beans and green piece.Mix well.
4.Add salt,pepper powder and capsicum.Mix well.
5.Pour soya sauce.Mix well.
6.Add chicken into it.Mix well.
7.Add chicken stock and a pinch of sugar.Mix well.
8.Add rice into it.Mix well.
9.Add spring onion and celery.Mix well.
10.Add  butter and mix well.
11.Serve hot.



Cucumber salad:

Ingredients:


1.Cucumber(cut into small square pieces)-1 cup
2.Coriander leaves-1/4 cup
3.Green chilly(chopped)-2 tea spoon
4.Curd-1 cup
5.Salt-to taste
6.Tomato(chopped)-1/4 cup


Preparation:


Mix all the above ingredients and serve along with fried rice



Mushroom masala

Ingredients:


1.Button mushroom(cleaned and sliced)-500 gram
2.Turmeric powder-1/2 tea spoon
3.Kashmiri chilly powder-1 tea spoon
4.Coriander powder-1 table spoon
5.Salt
6.Small onion-1/2 cup
7.Garlic-5 cloves
8.Green chilly-5
9.Coconut oil-1 table spoon
10.Curry leaves-2



Preparation:


1.Cook mushroom along with turmeric powder,coriander powder,chilly powder,salt and half cup water.
2.Grind green chilly,small onion,and garlic
3.Add it into the prepared mushroom.Cook well.
4.When the gravy becomes thick add coconut oil and curry leaves into it.
5.Serve hot.

Pazham pori (banana fry)

Ingredients:


1.Banana(cut into long pieces)-1 kg
2.Maida-3 cup
3.Gram flour-1 cup.
4.Salt-1/4 tea spoon
5.Egg-1
6.Sugar-2 table spoon(add more if required)
7.Soda bicarbonate-1/4 tea spoon
8.Coconut oil


Preparation:


1.Prepare a thick batter with the above ingredients except banana and coconut oil using water.
2.Take a pan.Heat coconut oil in it.
3.Now dip the banana pieces one by one in the batter and deep fry until it acquires a golden brown colour.
4.Now take the fried bananas from the pan and serve hot.

Coconut shake

Ingredients:


1.Tender coconut-2
2.Milk-2 cup
3.Sugar-1 cup(if required)
4.Cardamom powder-1 tea spoon

Preparation:


1.Take a mixie jar.
2.Add tender coconut,milk sugar into it.Mix well.
3.Off the mixie and add 1 tea spoon cardamom powder and shake well.
4.The coconut shake is ready to serve.

Egg roast

Ingredients:


1.Egg(boiled in water)-4
2.Onion(sliced)-2 cup
3.Tomato(sliced)-1 cup
4.Green chilly(chopped)-10
5.Ginger(chopped)-1 table spoon
6.Garlic (chopped)-1 table spoon
7.Turmeric powder-1/2 tea spoon
8.Kashmiri chilly powder-1 tea spoon
9.Salt-to taste
10.Curry leaves-2
11.Coconut oil-2 table spoon



Preparation:


1.Heat a kadai.
2.Add coconut oil.
3.Add onion.Saute well.
4.When onion gets golden brown colour,add ginger,garlic and green chilly.
5.Add turmeric powder and kashmiri chilly powder.
6.Add tomato.Mix well.
7.Cover it with a lid.Cook well.
8.After 3 minutes,open the lid and pour 1/2 cup of water.
9.Cook well.
10.Add cooked egg into it.Cook for 2 minute.
11.Spread curry leaves over it.
12.Off the flame.Serve hot.

Chicken noodles



Ingredients:


1.Plain noodles-4 cup
2.Ginger garlic paste-1+1 tea spoon
3.Chopped green chilly-2 teaspoon
4.Chopped onion-1 cup
5.Chopped carrot-1/2 cup
6.Fresh green peas-1/2 cup
7.Tomato sauce-(1+1/2) table spoon
8.Minced chicken-1/2 cup
9.Salt-to taste
10.A pinch of sugar
11.Finely chopped coriander leaves-2 tea spoon
12. Garam masala powder-1/4 tea spoon
13.Vegetable oil-2 table spoon
14.Pepper powder-1/2 tea spoon


Preparation:


1.Cook the noodles with salt in water and filter.
2.Heat a kadai and add vegetable oil.
3.Now add onion.Saute well until it gets a golden brown colour.
4.Now add green chilly and ginger garlic paste.
5.Add minced chicken and salt into it.
6.Add pepper powder and garam masala. Mix well until the minced meat is cooked.
7.Add green peas.Mix well.
8.Now add chopped carrot into it.
9.Add the prepared noodles into it and saute well.
10.Add tomato sauce and a pinch of sugar.
11.Remove the kadai from flame.
12.Spread coriander leaves on it.
13.Serve hot.

Orange cake


Ingredients:


1.Flour-1 cup
2.Baking powder-(1+1/2) teaspoon
3.Soda powder-1/2 teaspoon
4.Butter-100 gram
5.Sugar-(1+1/2) cup
6.Egg-3
7.Orange juice(1 orange)-1/4 cup
8.Orange peel-1 teaspoon

Preparation:


1.Mix flour,soda powder and baking powder well in a bowl.
2.Beat butter and sugar into creamy soft in another bowl.
3.Add eggs one by one into it and beat well until it gets a foamy and creamy texture.
4.Now add the above mixture of flour,soda powder and baking powder into it and beat for 10 seconds.
5.Add orange juice and orange peel into it and beat very well.
6.Take a baking tray and apply butter on it.
7.Now pour the cake mixture into it..
8.Bake it in a preheated oven at 180 degree Celcius for 20 minutes.
9.Decorate and serve.

Cut mango pickle

Ingredients:


1.Cut mango pieces-1 kg
2.Fenugreek powder-2 tea spoon
3.Mustard powder-3 tea spoon
4.Mustard-1 tea spoon
5.Fenu greek- 1/2 tea spoon
6.Curry leaves-1/4 cup
7.Chopped ginger-3 table spoon
8.Chopped garlic-3 table spoon
9.Vinegar-1/2 cup
10.Salt-to taste
11.Gingelly oil-1/4 cup
12.Kashmiri chilly powder-4 table spoon
13.Asafoetida-2 tea spoon
14.Chopped green chilly-1/4 cup


Preparation:


1.Heat a kadai and add oil.
2.Add mustard seeds and fenugreek seeds into it.
3.After 10 seconds add asafoetida.
4.Add chopped garlic,ginger and green chilly.
5.Now add curry leaves.
7.Add kashmiri chilly powder,fenugreek powder and mustard powder into it.Mix well and add salt.
8.Then add vinegar.
9.Remove the kadai from flame.
10.Now add the cut mango pieces into it.Mix well.
11.Allow it to cool.
12.Now you can preserve it in a bottle.
13.Use it after 2 days.

Karimeen (pearl spot fish) pollichathu

Ingredients:


1.Karimeen(pearl spot fish)-1

For marination:

2.Salt-to taste
3.Lemon juice-2 teaspoon
4.Turmeric powder-1/4 teaspoon
5.Pepper powder-1/2 teaspoon
6.Kashmiri chilly powder-1/2 teaspoon

For thick gravy:

7.Chopped onion-1/2 cup
8.Ginger paste-1/2 teaspoon
9. Garlic paste-1/2 teaspoon
10.Tomato-1
11.Chopped green chilly-2 teaspoon
12.Grinded small onion-1 tablespoon
13.Turmeric powder-1/4 teaspoon
14.Kashmiri chilly powder-1/2 teaspoon
15.Coconut oil-1 tablespoon
16.Pepper powder-1/4 teaspoon
17.Salt-to taste
18.Curry leaves-2

Preparation:

1.Marinate the fish for 10 minutes.
2.Fry(shallow) the marinated fish.
3.For the gravy,heat a kadai and pour coconut oil.
4.Add chopped onion until it turns golden brown colour.
5.Now add ginger garlic paste and grinded small onion.
6.Then add chopped green chilly.
7.Mix well for 2 minutes.
8.Add tomato and salt into it.
9.Add turmeric powder,kashmiri chilly powder and pepper powder into it.Mix well.
10.Now pour 2 table spoon of water.
11.Ad curry leaves and mix well.
12.Allow it to cool.
13.Now apply the gravy on the prepared fish.
14.Now tie it in a vazhayila( banana leaf).
     *Banana leaf is heated on flame before this step
15.Heat oil in a pan.Then heat the Vazhayila(with fish inside) until the two sides of the leaf get A deep brown colour.
16.Serve hot.

1.Beef(1/2 inch square pieces)-1 kg
2.Kashmiri chilly powder-2 table spoon
3.Pepper powder-2 teaspoon
4.Turmeric powder-2 teaspoon
5.Coriander powder-1 table spoon
6.Small onion paste-1 table spoon
7.Ginger paste-1 table spoon
8.Garlic paste-(1+1/2) table spoon
9.Coriander leaves-1/4 cup
10.Salt-to taste
11.Curry leaves-1/4 cup
12.Water-1 cup
13.Coconut oil-3 table spoon

Preparation:

1.Add turmeric powder,pepper powder,coriander powder,kashmiri chilly powder,salt and water into beef taken in a cooker.
2.Cook well.Make sure that no water is left.
3.Heat coconut oil in a kadai.
4.Add curry leaves.
5.Then add ginger-garlic paste and onion paste into it.Saute well until the oil comes up.
6.Now add the prepared beef into it.
7.Add coriander leaves and mix well.
8.Spread curry leaves over the dish and serve hot.


Healthy salad



Ingredients:

1.Carrot(chopped)-1 cup
2.Cucumber(chopped)-1 cup
3.Onion(chopped)-1 cup
4.Tomato(chopped without seeds)-1 cup
5.Coriander leaves(chopped)-1 cup
6.Green chilly(chopped)-1 teaspoon
7.Salt-to taste
8.Pepper powder-1/2 teaspoon
9.Lime juice-1/4 cup
10.Olive oil-2 teaspoon
11.Chat masala-1 teaspoon

Preparation:


1.Take a big bowl.
2.Add carrot,cucumber,onion,tomato,coriander leaves,Green chilly and salt.Mix well.
3.Add lime juice to this mixture.
4.Add pepper powder and chat masala.Mix well.
5.Add olive oil when the salad is ready to serve.

Idichacka Thoran

Ingredients:


1.Chopped idichacka(small raw jackfruit)-5 cup
2.Grated coconut-2 cup
3.Curry leaves-1/4 cup
4.Red chilly-5
5.Small onions-15

7.Salt-to taste
8.Coconut oil
9.Mustard seeds-1 teaspoon

Preparation:


1.Cook idichacka in 1 cup of water along with salt in a cooker.
2.Grind a mixture of coconut,small onions,garlic,red chillies and curry leaves
3.Heat a kadai.Pour 2 table spoon coconut oil into it.Add mustard seeds.
4.After 15 seconds add the above grinded coconut mixture into it.
5.Add salt and mix well.
6.Add the prepared idichacka into it.
7.Mix well and serve hot.

Vegetable kurma

Ingredients:


1.Potato(square pieces)-1 cup
2.Carrot(square pieces)-1 cup
3.Beans(1/2 inch length)-1 cup
4.Fresh green peas-1 cup
5.Cauliflower-1 cup
6.Salt-to taste
7.Garam masala-1/2 teaspoon
8.Cloves-10
9.Cinnamon-2
10.Cashew nut-50 gram
11.Coconut(Grated)-2 cup
12.Turmeric powder-1/2 teaspoon
13.Green chilly-5
14.Curry leaves-5
15.Coconut oil
16.Coriander leaves(chopped)-1/4 cup

Preparation:



1.Heat a kadai.Add 2 tablespoon coconut oil into it and heat.
2.Now add cloves,cinnamons and two curry leaves into it.
3.Add the mentioned vegetables into it and saute well.
4.Add salt,turmeric powder and garam masala powder.
5.Pour 3 cup of water into the kadai and cover it with a lid.
6.Cook well.
7.By this time take coconut,cashew nut,green chillies and 3 curry leaves.Mix them and make them into paste.
8.Add This paste into the curry.
9.Remove the kadai from the flame.
10.Now spread coriander leaves and 1 tablespoon coconut oil over it.
11.serve it.

Coconut Chammandi podi

Ingredients:


1.Coconut(grated)-4 cup
2.Red chilly(dried)-20
3.Curry leaves-1/2 cup
4.Salt-to taste
5.Tamarind(dry)-20 grams
6.coconut oil

Preparation:

1.Heat a pan.Add 2 teaspoon coconut oil.Add grated coconut oil into it.Make it dry.
2.Now add dried red chillies and curry leaves.Mix well until these turns golden brown colour.
3.Add dry tamarind into this mixture.Mix well for 1 minute.
4.Add salt and allow it to cool.
5.Now grind the above mixture in a grinder.
6.Serve with meal.

Special spicy dragon chicken

Ingredients:

Chicken -1 kg
Lime juice-2 tea spoon
Soya sauce-2 tea spoon
Salt- to taste
Cornflour-2 table spoon
Kashmiri chilly powder-2 tea spoon.
Pepper powder-1 tea spoon
Garam masala-1 tea spoon
Ginger-garlic paste-4 tea spoon
Egg-1
Coconut oil- need for deep fry
Curry leaves-1/4 cup
Crushed chilly- 2 table spoon
Small onion-1 cup
Spring onion(chopped)-1 table spoon

Preparation:


1.Clean the chicken and cut into small pieces.
2.Marinate it with salt,soya sauce and lemon juice for an hour.
3.Prepare a batter with cornflour,salt,Kashmiri chilly powder,garam masala powder,ginger garlic paste and egg.
4.chicken pieces are dipped in the batter and fried in coconut oil.
5.Heat oil in a kadai.Add grinded small onion and grinded curry leaves and sort.Add salt.
6.Add two table spoon crushed red chilly,one tea spoon pepper powder and sort until a pleasant aroma develops.
7.Now add the fried chicken.Sort well.
8.Spread spring onions over it and serve hot.

Mushroom Masala

Ingredients: 1. Mushroom - 2 packet 2. Garlic - 10 No.s 3. Shallot - 15 No.s 4. Chilly powder - 2 teaspoon 5. Turmeric...
