Easy sambar

Ingredients:


  1. Red gram-1 cup
  2. Drum stick-2(peel and cut into 5 cm long pieces)
  3. Onion-1(cut into pieces)
  4. Brinjal-1(cut into pieces)
  5. Tomato-2(cut into pieces)
  6. Potato-1(cut into pieces)
  7. Beans-6(cut into 2-3 cm long pieces)
  8. Pumpkin-200 gm cut pieces
  9. Green chilly-5(cut into long pieces)
  10. Tamarind juice-1 cup
  11. Chilly powder-1 teaspoon
  12. Coriander powder-1 teaspoon
  13. Turmeric powder-1/2 teaspoon
  14. Salt-to taste
  15. Fried ladys finger-5(cut into 1 inch pieces)

For grinding:

  • Roast coconut pieces(1/4 cup),asafoetida(1 teaspoon),Garlic(5 cloves),small onion(10),red chilly(5),fenugreek(1/4 teaspoon),mustard(1/2 teaspoon) and curry leaves.Grind the roasted mixture with water.

Preparation:



  • Cook red gram,tomato,green chilly and 3 cup water in a cooker.
  • Then add vegetables(cut pieces),turmeric powder,chilly powder,coriander powder and salt.Cook well.
  • Add tamarind juice and fried ladys finger pieces.
  • When it gets boiled add the grinded paste into it.
  • pour 1 cup water.
  • boil well.
  • Heat oil in a pan.
  • Add mustard(1 teaspoon),red chilly(3),chopped small onion(5) and asafoetida(1 teaspoon).
  • Pour the above mix over the sambar and stir well.
  • Serve hot along with plain parboiled white rice.

Chicken biriyani


Ingredients:

1.Rice(biriyani rice)-1 kg
2.Chicken(biriyani pieces)-1+(1/2) kg
3.Lemon juice-3 teaspoon
4.Ginger paste-2 tab spoon
5.Garlic paste-2 tab spoon
6.Green chilly paste-2 tab spoon
7.Onion-4(sliced)
8.Ghee-250 ml
9.Tomato-4(sliced)
10.Mint leaves-50 gm
11.Coriander leaves-50 gm
12.Garam masala powder-3 teaspoon
13.Pepper powder-1 teaspoon
14.Turmeric powder-1/2 teaspoon
15.Red chilli powder-2 teaspoon
16.Curd-2 teaspoon
17.Salt-to taste
18.Cinnamon-5
19.Cloves-5
20.Fresh green piece-25 gm
21.Cashew nut-25 gm(fried)
22.Kismis(raisins)-25 gm(fried)
23.Carrot(chopped)-1/4 cup

Preparation:

  1. Boil the chicken with 1 teaspoon red chilli powder,salt and 1/2 teaspoon garam masala in 1/4 cup of water.
For masala:
  • Heat 200ml ghee in a pan
  • Add cinnamon,cloves,sliced onion,1/2 teaspoon salt and lemon juice.Mix well.
  • When onion turns golden brown colour add ginger garlic paste and green chilly paste.Mix well.
  • Add sliced tomato,turmeric powder,chilli powder,pepper powder and garam masala powder.Mix well.
  • When cooked well,add curd,coriander leaves,mint leaves and some salt to taste.Mix well.
  • When ghee comes up add the prepared chicken pieces.Mix it well.
  • Then separate the chicken from the masala.


   

     2. Boil water in a rice pot.
     3. Add rice into the boiled water.
     4. When rice  gets half cooked add green pieces and chopped carrot.Add salt to taste.
     5 .When rice is cooked separate it from the water.
     6. Into another rice pot 25 ml ghee is added.Heat well.
     7.Add half of the prepared masala.
     8.Add rice above it.
     9.Add 25 ml ghee above it.
   10.Add 1/2 teaspoon garam masala.
   11.Spread mint,coriander leaves,cashew nuts and kismis.
   12.Add rest of the masala over it.
   13.Cover the rice pot using a lid and "dum" well.
   14.After 30 minute open the lid and mix the biriyani.
   15.Serve the biriyani along with the chicken.

Easy chilli chicken with ghee rice


Easy Chilli chicken
Ingredients:
    1.Chicken                                 -1kg(small pieces)
    2.Lemon juice                          -1 tab spoon
    3.Soya sauce                           -2 teaspoon
    4.Salt                                         -to taste
    5.Corn flour                               -2 tablespoon 
    6.Onion                                     -2(cut in square pieces) 
    7-Capsicum                              -1(cut in square pieces)                                                                
    8.Chopped ginger                   -2 teaspoon
    9.Chopped garlic                    -2 teaspoon
  10.Chopped green chilly           -2 teaspoon
  11.Coconut oil or vegetable oil-2 tab spoon
  12.Garam masala                     -1 tea spoon
  13.Pepper powder                    -1/2 teaspoon
  14.Cumin powder                      -1/2 teaspoon
  15.Tomato sauce                      -2 tab spoon
  16.Chopped coriander leaves -1/4 cup
Preparation:
  • Take chicken pieces in a bowl.
  • Into it soya sauce,salt,lemon juice and corn flour are added.
  • Mix well using hands and keep it for marination for about 30 min.
  • Then deep fry the chicken smoothly.
  • Heat some vegetable oil in a pan placed on flame.
  • Chopped onion,capsicum,ginger,garlic and green chilly mixture are added into it.Saute well.
  • Add garam masala,pepper powder and cumin powder.Mix well.
  • Add salt and tomato sauce.
  • Then the prepared chicken is mixed with this mixture.
  • Add coriander leaves.Mix well.
  • serve hot.



Ghee rice
Ingredients :

    1.Rice(biriyani rice)               -4 cup
    2.Boiled water                       -8 cup
    3.Ghee                                   -4 tab spoon
    4.Cardamom                         -5
    5.Cinnamon                            -2 pieces
    6.Garam masala powder     -1 teaspoon
    7.Onion(chopped)                -1 cup
    8.carrot(chopped)                 -1/4 cup
    9.Ginger garlic paste            -2 teaspoon
   10.Green chilly paste             -1 teaspoon
   11.Salt                                     -to taste
   12.Fried nuts and raisins      -50gm

Preparation:
  • Take a rice pot on flame.
  • Add ghee into it.
  • Add cardamom,cinnamon and onion.Mix well.
  • When onion becomes golden brown add ginger garlic paste and green chilly paste.Mix well.
  • Add salt and rice.
  • Add carrot into it.
  • Add boiled water into the rice pot.
  • Close the rice pot using a lid.
  • After 5 min low the flame.
  • Open the lid after 20 min.
  • Add garam masala powder and fried cashew nuts and kismis(raisins).Mix well.
  • Off the flame.
  • After 5 min serve hot.

Fish fry


Ingredients:

      1.Fish(king fish)-1/2 kg
      2.Ginger garlic paste-3 teaspoon
      3.Lemon juice-1teaspoon
      4.Chilly powder-3 teaspoon
      5.Turmeric powder-1/2 teaspoon
      6.Corn flour-2 teaspoon
      7.Salt-to taste
      8.Oil-as needed

Preparation:

       -Grind ingredients 2-7.
       -Apply the mixture on the fish.Marinate for 30min.
       -Deep fry the fish and serve hot.

Fish curry


Ingredients:

1.Fish(any)-1kg
2.Chopped onion-2 cup
3.Chopped ginger-1 teaspoon
4.Chopped garlic-1 teaspoon
5.Chopped green chilly-2 teaspoon
6.Curry leaves-to taste
7.Oil-2 tab spoon
8.Salt-to taste
9.Turmeric powder-1/2 teaspoon
10.Red chilly powder(Kashmiri chilly powder)-2 teaspoon
11.Coriander powder-2 teaspoon
12.Tamarind juice-1cup(as needed)
13.Fenugreek powder-1/4 teaspoon
14.Water-1 cup
15.Grinded coconut-1/2 cup

Preparation:

-Heat oil in a pan.
-Add chopped onion,chopped garlic,chopped ginger and chopped green chilly.Saute well.
-Add Curry leaves,turmeric powder,chilly powder,coriander powder and fenugreek powder.Mix well.
-Add salt and tamarind juice.
-Add water.When the mixture gets boiled add fish pieces.
-After 5 min,add the grinded coconut and curry leaves.
-Remove the pan from heat after 5 minutes.Serve hot.

Simple prawn recipe


Ingredients:

1.Prawns-1/2kg
2.Oil-2 tab spoon

For grinding

Grind these ingredients well.
1.Small onion-15
2.Garlic-10 cloves
3.Salt-to taste
4.Turmeric powder-1 teaspoon
4.Red chilly powder-2 teaspoon
5.Water for grinding

Preparation:

1.Add the grinded mixture into the prawns.Mix well.Marinate for 30 min.
2.Heat oil in a pan.Add prawns mix into it.
3.Cover the pan with a lid.After 5 minutes open the lid and mix well.
4.Allow the gravy evaporate until the oil comes up.Turn off the flame.
5.Serve hot.
