Ingredients :
Ingredients for rice :
1. Biriyani rice - 1 kg
2. Garam masala - 1 teaspoon
3. Ghee - 1/2 cup
4. Carrot (chopped) - 1/4 cup
5. Salt - as needed
6. Coriander leaves - 1/2 cup
7. Mint leaves - 1/2 cup
8. Fried cashew nut - 1/4 cup
9. Fried raisin - 1/4 cup
Ingredients for biriyani masala :
1. Beef (big pieces) - one and half kg
2. Onion - 5 Numbers (sliced)
3. Ginger garlic paste - 4 tablespoon
4. Green chilly paste - 2 tablespoon
5. Tomato - 4 numbers (sliced)
6. Coriander leaves (chopped) - 1 cup
7. Mint leaves (chopped) - 1 cup
8. Ghee - 1/2 cup
9. Coconut oil - 1/4 cup
10. Lemon juice - 1 tablespoon
11. Red chilly powder - 2 teaspoon
12. Turmeric powder - 1 teaspoon
13. Garam masala powder - 2 teaspoon
14. Fenugreek - 1 teaspoon
15. Cinnamon - 2 pieces
16. Cardomom - 4 pieces
17. Clove - 5 pieces
Preparation :
Preparation for making rice :
1. Take a biriyani pot.
2. Add required water for boiling rice.
3. Boil the water.
4. Add washed rice into it. Mix well.
5. Add salt and chopped carrot.
6. Wait until rice cooks well.
7. Strain the rice using a strainer.
Preparation for making biriyani masala :
1. Put the beef pieces into the pressure cooker.
2. Add 1 teaspoon chilly powder, 1/2 teaspoon turmeric powder, 1 teaspoon garam masala powder and (salt as required).
3. Mix well and cook the beef.
4. Take a pan and add coconut oil and ghee.
* Add maggi chicken stock cube if needed.
5. When oil get heated add sliced onion into it.
6. Add fenugreek, cinnamon and clove into it. Saute well.
7. When onion becomes light brown add lime juice into it. Saute well.
8. Add ginger garlic paste and green chilly paste into it. Saute well.
9. Add 1 teaspoon garam masala powder.
10. Add chopped tomato. Mix well.
11. Add coriander leaves and mint leaves.
12. Add cooked beef into it.
13. Cover the pan with a lid for 5 minute in low flame.
14. Open the lid and mix well.
15. When the water content in the pan is decreased and oil starts to appear, off the flame.
Preparation for Dum :
1. Take another pan
2. Add 1/4 cup ghee into it. Heat the pan in sim.
3. Add the half of prepared biriyani masala into it.
4. Add the half prepared biriyani rice into it and level it.
5. Add 1/4 cup ghee on top of the rice.
6. Sprinkle the coriander leaves (1/4 cup) and mint leaves (1/4 cup).
7. Add the remaining biriyani masala above it.
8. Add the remaining rice above it. Add the remaining 1/4 cup ghee above it.
9. Sprinkle 1/4 cup cashew and 1/4 cup raisins above the rice.
10. Level the rice and cover the pan with a lid.
11. Add burnt charcoal above the lid and put the pan in dum ( Place a weight above the lid).
